Salad Days for Spring

Spring is often used as a metaphor for youth. So is the term "salad days." With foliage opening all around the world is colored with many shades of green. And when I think of greens I'm reminded that the edible kind are essential to maintaining good health and keeping our minds and bodies as youthful as possible. MONKFISH - A member of a family of fish called anglers; the monkfish is widely considered one of the ugliest fish in the sea. It can grow to 50 pounds and 4 feet in length and has a taste similar to cod and a texture similar to lobster. The monkfish has a huge mouth with a somewhat flattened body that is lacking scales.
